[SAMPLE RECIPE] EGG AND SAUSAGE MUFFINS These have just enough added spice with the sausage, but if you like things a little spicier then add a few pepper flakes on top of each muffin cup before baking or whisk into the egg mixture with the other ingredients. Ingredients • 2 spicy Italian sausage links • 1 tablespoon butter • 6 eggs • 1 cup shredded cheddar cheese • Salt and pepper to taste Instructions • Preheat the oven to 350°F • Spray a jumbo muffin tin with a non-stick spray. • Thinly slice the sausage links (but not too thin). • Sauté sausage slices in butter over medium high heat. • Place an even amount of sausage slices on the bottom of each muffin cup. • Whisk eggs, hot sauce, salt and pepper in a bowl; add the cheese and mix one more time. • Pour the egg mixture into the muffin tin over the sausage pieces. • Bake for 20 minutes. • Turn the oven off. • Let the cupcake tin rest in the hot oven for an additional 5 minutes before removing. This is a collection of more than 30 Christmas Recipes. [SAMPLE RECIPE] Green Onion and Cornbread Stuffing This is good with turkey, but this would also be a great side dish to chicken or pork chops. If you like to experiment, try adding bacon, cut into half inch pieces, chopped bell pepper pieces or both! Ingredients • 1 can, 10 ½ ounces, condensed French onion soup • 1 Soup can of water • ¼ Cup margarine • 1 Cup celery, cut into ¼ inch cubes • 1 Cup green onions, thinly sliced • 1 ½ Teaspoons poultry seasoning • 2 Packages, 8 ounces each, cornbread stuffing mix • Vegetable cooking spray Instructions • Preheat oven to 350. • In a 5-quart saucepan, combine soup, water, margarine, celery, onions, and the poultry seasoning. Give it a mix. Bring it to boil. Remove from heat. • Stir in the cornbread stuffing mix. • Bake stuffing in a 1 ½ quart casserole coated with non-stick vegetable cooking spray. • Bake, covered, at 350 degrees F.
